Anji Bai Cha, also known as Anji White Tea, is a rare and highly prized green tea from Anji County in Zhejiang Province, China. Despite its name, which translates to "white tea," Anji Bai Cha is classified and processed as a green tea. The name refers to the distinctive pale, almost white coloration of the early spring leaves, which results from a rare genetic trait unique to the Baiye No. 1 cultivar. This natural mutation causes the young leaves to appear silvery-white or jade green during the cool temperatures of early spring.

Anji Bai Cha is produced exclusively within Anji County under protected geographic indication status, ensuring its authenticity and quality. The region's cool spring climate and mountainous terrain provide the specific conditions necessary for the tea's unique characteristics to develop. The tea is highly sensitive to temperature, with the pale leaf color appearing only when the plants grow at temperatures below 23 degrees Celsius.

The harvest window for Anji Bai Cha is exceptionally brief, typically lasting from late March to mid-April. The highest quality tea comes from the earliest pickings of the season, when the tender buds and young leaves display their most pronounced pale coloration. As temperatures rise, the leaves gradually return to their normal green color, making timing critical for producers. The tea is carefully hand-picked and processed using traditional green tea methods, including pan-firing to halt oxidation and preserve the delicate flavor.

Anji Bai Cha is renowned for its exceptional amino acid content, particularly L-theanine, which can be up to twice as high as ordinary green teas. This gives the tea its characteristically sweet, umami-rich flavor with a smooth, refreshing taste and delicate floral notes. The limited production, biological rarity, and cultivar-specific traits have established Anji Bai Cha as one of China's most sought-after premium green teas.
