Baimudan, also known as White Peony, is a celebrated white tea from Fujian Province, China, ranking among the country's most treasured teas. The name "White Peony" refers to the tea's elegant appearance, with silvery-white buds surrounded by young green leaves that resemble peony blossoms when steeped. Unlike Silver Needle, which uses only the finest buds, Baimudan is crafted from one bud and one to two young leaves, creating a more robust and complex flavor profile while maintaining the delicate character of white tea.

The tea's origins can be traced back to the late Qing Dynasty, when tea makers in Fujian began experimenting with different plucking standards to create varied expressions of white tea. Baimudan is primarily produced in the Fuding and Zhenghe regions of Fujian Province, where the mild climate and abundant rainfall provide ideal growing conditions for cultivating exceptional white tea.

As a white tea, Baimudan undergoes minimal processing and only light oxidation. The leaves are carefully hand-picked in early spring, typically from late March to early April, when the buds are accompanied by their first tender leaves. The plucked leaves are traditionally spread on bamboo trays and allowed to wither naturally in controlled conditions, either in gentle sunlight or indoors with careful air circulation. This extended withering process, followed by a low-temperature drying, preserves the tea's natural sweetness and delicate floral notes.

Baimudan offers a fuller-bodied taste compared to Silver Needle, with a smooth, slightly sweet flavor and subtle notes of honey, melon, and fresh flowers. The tea brews to a pale golden color and is prized for its balanced character and lingering sweetness.

Bai Mudan has a loose mix of silvery-white buds and flat green leaves, giving it a soft, natural look. During the brewing process the green leaves open up to reveal the delicate buds resembling blooming peonies.
